Pumpkin Spice Muffins


Ingredients:

1 cup of pumpkin purée

1/3 cup of maple syrup or honey

3/4 cup of evaporated milk or substitute

1 egg or substitute

2 cups of flour or Kodiak pancake mix

1 teaspoon of baking powder

1 teaspoon of pumpkin spice or mixture of cinnamon, ginger, clove, & cardamom

Add chia seed, flax seed, hemp seed, brewers yeast, or another superfood for wxtra nutrition.

Directions:

Mix wet and dry ingredients separately. Combine mixtures. Place batter in muffin cups. Cook for about 30 minutes at 170 C, approximately 350 F.
