Chocolate Chip Oatmeal Cookies Vegan + Gluten Free

Ingredients:

1/2 cup of softened, unsalted butter or butter alternative

3/4 cup brown sugar (or sub with coconut sugar)

1 large egg (or sub with 1/2 a cup of yogurt, applesauce, & / or banana combo)

2 teaspoon vanilla extract (or use grade A maple syrup)

1-1/4 cup Kodiak Cakes Whole Wheat, Oat, & Honey Flapjack & Waffle Mix (or use Kodiak Cakes Gluten Free Mix which is ground up oats)

3/4 cups rolled oats

3/4 cup chocolate chips (or add dried fruit like raisins)


Directions:

Heat the oven to 350. Consider softening the butter in a container in the oven as it is preheating to 350.

Mix the softened butter with brown sugar or coconut sugar. Mix the rest of the wet ingredients in. Mix the rest of the dry ingredients together. Combine the wet and dry ingredients. Place the mix in the freezer for a few minutes for easy handling. Use an ice cream scooper to create the cookie shapes. Place the circular cookie dough onto a cookie sheet. Bake for 9-12 minutes.
